Sugar Esters help to maintain the stability of a food product. They are often used in baked goods, cereals, ice cream and sauces. They also help ensure other ingredients in a food or drink product don't separate. Sugar Ester provides excellent batter whippability and stability, and the texture of the baked sponge cake is fine and soft, maintaining its colour and egg flavour. Easy preparation, good batter stability (2-3 hours), increased volume (10-20%) with finer crumbs and uniform texture, and longer shelf life keeping product soft and tasty.
