Sugar Ester provides excellent batter whippability and stability, and the texture of the baked sponge cake is fine and soft, maintaining its colour and egg flavour. Easy preparation, good batter stability (2-3 hours), increased volume (10-20%) with finer crumbs and uniform texture, and longer shelf life keeping product soft and tasty.
