Strawberry Orzo Pasta Salad in Sorghum Vinaigrette

  1. Make the vinaigrette. Combine, sorghup syrup, olive oil, red wine vinegar, dijon mustard, sugar, salt and pepper in a mixing bowl and whisk to combine. Set aside
  2. In a pot of boiling water, cook orzo for 8 minutes or until al dente. Drain and let it cool.
  3. In a large mixing bowl, add the orzo pasta, sorghum vinaigrette, pistachios, red onion and arugula. Toss until combined.
  4. Garnish with feta cheese and enjoy!
