Une fine poudre blanche faite à partir de betteraves, et utilisée comme substitut du sucre. L'Isomalt est le plus souvent utilisée en production commerciale dans les produits "sans sucre" car elle contient environ deux fois moins de calories que le sucre blanc. Elle est excellente dans les bonbons durs sans sucre, car elle absorbe peu d'eau et crée un fini non collant. Elle est aussi idéale pour les décorations de sucre ou le sucre tiré.
