La Poudre de Lait Écrémé (Non Instantannée) est une poudre blanche, fine et dense, faite en concentrant le lait pour en retirer presque toute l'eau. Cette méthode crée une saveur similaire au lait évaporé, et peut remplacer le lait frémi dans les recettes traditionnelles. Plus lente à reconstituer, elle est meilleure lorsque combinée à de l'eau tiède au mélangeur ou au fouet, et refroidie avant la consommation. Elle est la préférée des boulangers.
