Gluten-Free Maple-Bacon Scones

Bacon and maple sugar make these scones special. Expect a rush to the breakfast table.

Ingredients

Gluten-Free Flour Blend
Gluten-Free Maple-Bacon Scones
  • 2 cups gluten-free flour blend
  • 4 tsp baking powder
  • ½ tsp kosher salt
  • 4 tbsp unsalted butter
  • 2 tbsp shortening
  • ¾ cup whipping cream , 35%
  • 1 large egg , beaten
  • 2 cups crisp bacon , crumbled
  • ½ cup maple sugar

Instructions

  1. Sift together all the ingredients and store in a container.

  1. Preheat an oven to 350ºF. Line a baking sheet with parchment paper.
  2. Sift together the flour, baking powder and salt.
  3. Cut in the butter and shortening.
  4. Whisk together the cream and egg and add to the dry ingredients.
  5. Stir in 1 cup of bacon and 1/4 cup maple sugar.
  6. Turn the dough onto a lightly floured surface and roll the dough into a 2" thick rectangle. Cut out the biscuits using a round cutter.
  7. Place them on the prepared baking sheet and sprinkle the remaining bacon and maple sugar on top.
  8. Bake the scones for 15 to 20 minutes or until golden.
