Berry Spinach Quinoa Salad with Citrus Basil Vinaigrette

- 1 cup Triblend Quinoa
- 1 tsp Basil dried
- 2 tbsp Lemon Vinegar
- 1/2 cup Extra Virgin Olive Oil
- 2 tbsp Agave Liquid
- 1/4 cup Orange Juice
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 2 cups Spinach
- 1/2 cup Raspberries
- 1/2 cup Blackberries
- Cook quinoa as per instructions on package or see Recipe Notes below. Set aside.
- In a small bowl, combine basil, lemon vinegar, olive oil, agave, orange juice, salt and pepper. Whisk until fully combine and set aside.
- In a large bowl, add spinach, raspberries, blackberries and drizzle the Citrus Basil Vinaigrette and toss.
- Serve and enjoy!
How to cook quinoa? Add 1 cup of quinoa to 1 1/2 cups of water in a pot on medium heat. Bring to a boil, cover, reduce heat and simmer for 15 minutes. Remove from heat and let it stand covered for a few minutes. Drain water if needed. Fluff with a fork.
