Chickpea Croutons

1 hrs 15 minsSeasoned and roasted chickpeas are a great substitute for croutons on salads and are delicious eaten by the handful as a healthy snack.

Ingredients
- 1-1/2 tsp ground cumin
- 1-1/2 tsp David's smoked paprika
- 1/2 tsp cayenne
- 1 tsp sea salt flakes
- 2-15 oz cans of chickpeas , drained and rinsed
- 2 tbsp coconut oil , melted
- Juice of half a lime
- Juice of half a lemon
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Combine the cumin, paprika, cayenne, and sea salt.
- Spread on the prepared baking sheet.
- Spread on the prepared baking sheet.
- Roast for 45 minutes to 1 hour, stirring occasionally, until crunchy.
- Remove from the oven and toss with the remaining spice mixture.
- Cool and store in an air-tight container for several weeks.
