Avocado Devilled Eggs with Spirulina Puffed Quinoa

Ingredients
- 1/2 cup Puffed Quinoa
- 1 tbsp Green Spirulina Powder
- 1 tsp Honey Mustard Powder
- 1/2 tsp Smoked Sweet Paprika
- 2 tsp Lemon Juice
- 1/4 cup Greek Yogurt
- 1/2 Ripe Avocado , pit remove, flesh scooped out
- 8 Hard Boiled Eggs
- 1/2 tsp Salt
- 1/2 tsp Ground Black Pepper
- Peel the hard boiled eggs and cut eggs in half. Gently remove the yolks and transfer to a bowl.
- Add honey mustard powder, paprika, salt, pepper, lemon juice, yogurt and avocado. Mash and mix until fully incorporated and smooth.
- Transfer the mixture to a piping bag and pipe the filling onto each egg half.
- In a separate bowl, mix the puffed quinoa with the spirulina until fully coated.
- Sprinkle the devilled eggs with the spirulina puffed quinoa.
