Avocado Devilled Eggs with Spirulina Puffed Quinoa

Avocado Devilled Eggs with Spirulina Puffed Quinoa Image

  1. Peel the hard boiled eggs and cut eggs in half. Gently remove the yolks and transfer to a bowl.
  2. Add honey mustard powder, paprika, salt, pepper, lemon juice, yogurt and avocado. Mash and mix until fully incorporated and smooth.
  3. Transfer the mixture to a piping bag and pipe the filling onto each egg half.
  4. In a separate bowl, mix the puffed quinoa with the spirulina until fully coated.
  5. Sprinkle the devilled eggs with the spirulina puffed quinoa.
