Une herbe aromatique avec un arôme d'agrume poivré et âcre, utilisé dans la cuisine asiatique. La poudre de galanga est obtenue à partir du rhizome, comme le gingembre. Elle est originaire de Malaisie et c'est un ingrédient incontournable de la cuisine Thai, Malaisienne, Vietnamienne et Indonésienne. Pratique à utiliser sous sa forme séchée, une petite cuillère de poudre équivaut à 1/2 pouce de galanga frais. Sa saveur distincte est utilisée dans le boeuf au curry malaisien, le curry vert Thai, la soupe Tom Yum, et la sauce cacahuète du satay.
