Le riz sauvage est en fait une semence d'herbe. Il faut trois livres de semences pour obtenir une livre de riz sauvage. Il contient plus de protéines, minéraux, vitamines B, acide folique et glucides que les autres grains. Sa saveur après cuisson a des notes de noisette et une légère amertume. Les grains éclatent à la cuisson, révélant un intérieur blanc et tendre. Le riz sauvage est excellent en pilaf ou en farce, particulièrement avec d'autres riz et grains. Il est délicieux dans une salade sud-ouest de maïs, piments forts et poivrons rôtis.

    COOKING INSTRUCTIONS:  Place 1 cup of rice and 2 1/4 cups of water in a pot covered over medium heat. Bring to a boil and turn the heat down to low and let it simmer for 40-50 minutes. Let it cook and absorb the liquid. Rice is cooked when the kernels burst open.
