L'extrait de brandy dénaturé est un concentré, utilisé dans les pâtisseries et la cuisson, qui n'ajoutera pas trop de liquide à une recette. Parfois appelé brandy salé parce que du sel est utilisé pour éliminer l'alcool. Il contient des traces d'alcool et ne convient pas à certaines diètes. Pour la boulangerie et la production alimentaire, c'est un choix économique.
