Il s'agit d'une poudre de chili provenant de la région basque en France, prisé par les chefs professionnels. Il possède une jolie teinte rouge-orangé et un piquant doux. Il remplace souvent le poivre dans la Piperade basque, plat de légumes braisés, ou dans le Poulet Basquaise. Il relève les oeufs frits et les frites maison, et est excellent dans les vinaigrettes avec du vinaigre de Xérès et de l'huile d'olive extra vierge.
