A thickening and binding agent used in food manufacturing. Pregelatinized Wheat Starch is made by swelling wheat in cold water and is used to thicken mixtures without cooking or high heat. Used largely in manufacturing, it's important in finished products that require a delicate flavour, light texture and colour. It's used as a binding agent in sausage-making and processed meat. It also thickens soups and gravies and is found in breading mixtures.
