Pink peppercorns are a species unrelated to green, black and white pepper. Their name derives from the similarity of their appearance to pepper and their flavour is less pungent with fruity citrus notes and a subtle sweetness. Preserving in vinegar gives the berry a soft texture, not suitable for grinding. Delicious and a colourful addition to a traditional Steak au Poivre sauce. They add their own distinct flavour to vinaigrettes and can be added as an aromatic to pickling liquid for preserving vegetables such as fennel.
