Also known as white miso, this is the paste most frequently used to prepare miso soup in Japanese restaurants. Miso can be used as a glaze when cooking vegetables such as eggplant. Shiromiso is delicious on fresh asparagus or corn on the cob along with butter. It also adds a beautiful, deep, delicate flavour to braising liquids for chicken or vegetables.
