Cocktail Andalouse with pepper is a delicious mixture of several varieties of olives grown in the south of France, including jumbo pimento stuffed green olives, violet, and Coquillo olives. They are superb on their own or as part of tapas with thinly sliced Serrano ham, Manchego cheese, Membrillo and toasted almonds along with a glass of sherry or wine.
