Whole Smoked Serrano Chili is left on the vine to mature and turn bright red, then they are picked and smoked and have a smoky, berry-like flavour and lingering heat. Before using they can either be toasted in a dry pan or soaked in boiling water to soften. Traditionally used in braises or mole sauces and in pineapple or mango salsa for grilled pork or chicken. Use to flavour and add heat to chilli con carne or in a fiery hummus.
