Rosemary grown and harvested in Provence is superb and highly aromatic from natural volatile oils. It has a pungent, herbaceous and slightly resinous flavour and aroma. AOC Rosemary is delicious in marinades with olive oil and garlic for lamb or pork for charcoal grilling. It is delicious in vegetable dishes such as Ratatouille or as a flavouring to cook beans like borlotti. Rosemary is excellent in Italian tomato sauce, to flavour focaccia, and is a superb addition to marinades for olives or goat cheese.
