An aromatic herb with delicate anise and parsley flavour. Whole chervil are the delicate green herbal fronds prized by chefs for its fragrance and flavour. It is one of four herbs in the classic French mix, fines herbes, used to flavour omelettes and vinaigrettes. Along with tarragon, it's a natural in sauce bearnaise. Use it to flavour buttermilk dressing or in remoulade sauce for fried fish and shellfish. Whip it into a compound butter and slather it on chicken for roasting or let it melt on spring vegetables like asparagus and morel mushrooms.
