Mokaya is from the Chiapas region of Mexico, regarded as the home of cocoa, with some of the oldest recorded use of preparations made with cocoa. Designated organic, the cocoa beans has a deep, pleasing mahogany colour with some reddish tones. Overall it has an exotic fruit flavour with notes of roasted almonds and hazelnuts and a hint of sweet pepper and vanilla to finish. Mokaya 66% Mexico Organic is a superb choice for cooking or baking in mousses, soufflés, cookies, cakes or in any recipe calling for a semi-sweet chocolate.
