Gellan Gum is a gelling agent and is a product of molecular gastronomy. It's a food additive used as a thickener, emulsifier and stabilizer. It's also known as E418. The low acyl gellan gum can create strong gels that are crumbly and non-elastic. It can be used in cake icings, jellies, spreads, jams, puddings, sauces or dairy products and could be a substitute for starch in some prepared products
