Bean Thread Vermicelli is made with mung bean starch and are also known as cellophane or glass noodles owing to the fact that when cooked (soaked) they become transparent. They are naturally gluten free and are a good choice for wheat sensitive diets. Bean Thread Vermicelli is traditionally served with stir-fries, soups, and hot pots but can also be found in fillings for dumplings. In Thailand, they are mixed with pork and shrimp in a spicy salad and in Vietnam, it is an essential ingredient in fresh spring rolls.
